If rib-eye is the king of meats, then we’re about to introduce you to the queen.
The brazilian picanha is one of the most flavourful cuts of beef, which is taken from the top of the rump. You might also know it as a rump cover, sirloin cap or even culotte steak. With its stunning beauty, high nutrient content and exciting, intense flavor, it is truly an extremely special ingredient in this dish.
It is triangular in shape and surrounded by a thick layer of fat. Because it is not an overused muscle, this cut remains beautifully tender and juicy, producing an amazing flavour when cooked.
The meat is cooked at low temperature to keep it perfectly soft and then grilled to increase the aromas.
To give this dish a very healthy twist which is perfect for a long working day we are adding a purée from pea and coconut and garnish the dish with peas, soya beans, zucchini, radish, green asparagus our chefmade zucchini pesto (as well available in our shop) and a touch of lemon.
