This incredible dish developed from our Executive Chef will definitely let you speechless.
At first, we are preparing our own fermented kohlrabi for more than 7 days which we use partly as decoration on this dish. The base is a roasted kohlrabi purée which is than garnished with a nice potion of fresh shitake mushrooms which are pan seared with Asian spices. The mix between the refreshing acidity, mushrooms such as vegetables giving you a perfect balanced still very light but filling vegan main course.
