Morel Mushroom | Peas | Grilled Cauliflower | Caramelized Cauliflower purée
We are pleased to offer you a luxury mushroom which has a short season from April to June. Locally resourced and freshly delivered to our kitchen where our Executive Chef cook them gently and glaze the Morel mushrooms with a homemade composed Asian sauce. Building this dish we spread a caramelized cauliflower puree and adding pan seared peas which are sautéed with onion confit and a touch of garlic. Than we decorate this premium dish with our freshly prepared morels, grilled cauliflower while using only the florets of it.
When you eat: Top seasonal Luxury Morel Mushroom with a gentle earthy & forestry flavour. Grilled aromas from the cauliflower balanced with tasty firm peas. Great balance between Asian sauce and onion confit.
