Hugely popular in Brazil, (origins of our Executive Chef Mario) picanha is one of the most flavorful cuts of beef you will find.
At first the meat is cook sous vide to keep his juiciness and tenderness it deserve, after cooking we traditionally grill the meat to enhance all characteristic aromas. For a limited time we are adding as garnish a luxury mushroom which has a short season from April to June. Locally resourced and freshly delivered to our kitchen where our Executive Chef cook them gently and glaze the Morel mushrooms with a homemade composed Asian sauce. Building this dish we spread a caramelized cauliflower puree and adding pan seared peas which are sautéed with onion confit and a touch of garlic. Than we decorate this premium dish with our freshly prepared morels grilled cauliflower while using only the florets of it. Than we place two nice slices of the freshly grilled Picanha Beef and round the entire dish up with our famous gravy sauce.
